
Healthy Comfort Food
All this cold weather calls for a good recipe, don’t you think? I have been craving a good comfort food so much but also want to keep it healthy and diet friendly. This one is SO good and so easy to make. I’m not sure what I would call it; Stir Fry?
Whatcha need: 1 lb ground turkey, a good handful of asparagus, cherry tomatoes, half a red onion, 2 red/orange bell peppers, some mushrooms (if you like them), cilantro (measure with your heart), a spoonful of tomato paste, a dollop of plain greek yogurt, chili flakes, and rice or cauliflower rice.
How to make: Add 1 cup of rice and 2 cups of water in a pan and let that cook while you prepare everything else.
Brown and cook through the ground turkey in one stove top pan.
While the ground turkey is cooking, chop the veggies in desired bite-sized-bits and toss in a drizzle of olive oil on another pan on medium heat. Once the veggies are cooked to your liking (I like them with a little bit of crunch still), toss in a spoonful of tomato paste and ground turkey and stir until it is fully covered in tomato paste.
Once the rice is cooked, throw your desired amount in a bowl and top with veggies, greek yogurt, cilantro, and chili flakes. So good. Super easy to make for more people but this cooks for 1-3.
