
Riley’s Roasted Butternut Squash Soup Recipe
When the weather turns chilly, there’s nothing better than a warm bowl of soup to cozy up with. This roasted butternut squash soup is my favorite fall dish. It’s easy to make, packed with delicious & naturally sweet flavors, and, best of all, it doesn't make my wallet sad.
Whether you’re cooking for family, friends, or just want some soup for yourself, this hearty recipe will quickly become a seasonal favorite.
Ingredients (Serves 6):
1 tablespoon olive oil
1 onion, chopped
1 cup carrots, sliced
6 garlic cloves, peeled
2 teaspoons kosher salt
1 medium butternut squash, halved lengthwise and seeded
6 cups chicken broth
2 tablespoons maple syrup (optional, for added sweetness)
2 tablespoons apple cider vinegar
1 pinch cayenne pepper
½ cup crème fraîche or sour cream (garnish)
1 tablespoon chives, chopped (garnish)
Directions
Step 1: Roast the Vegetables
Preheat your oven to 400°F.
In a large roasting pan, drizzle olive oil and toss with chopped onion, carrots, and garlic until fully coated. Add a pinch of salt.
Place the halved squash on top of the vegetables, cut-side up, and sprinkle with the remaining salt.
Roast for about 1 hour, or until the squash is tender and easily pierced with a knife.
Remove from the oven and let everything cool down.
Step 2: Blend the Soup
Scoop out the roasted squash flesh and place it in a large pot with the roasted vegetables.
Add chicken broth and maple syrup.
Bring to a simmer over high heat, then reduce to low heat and cook for 45–60 minutes to let all the flavors blend together.
Use an immersion blender to puree the soup (If you don’t have an immersion blender, carefully blend in batches using a regular blender).
If the soup is too thick, add some more broth or water.
Step 3: Season and Serve
Stir in the apple cider vinegar and a pinch of cayenne pepper.
Taste and adjust seasoning as needed.
Garnish with a dollop of crème fraîche or sour cream and a sprinkle of chopped chives, and voilà!
