Summer Dessert

I can always tell that summer is here because the rhubarb in my garden is going TOTALLY crazy! I've already made four rhubarb crisp desserts and brought rhubarb to at least five people, and there's still so much I don't know what to do with. When summer starts, I typically make at least one crisp a week to bring to the resort to share in the office or to my family because it is just so good, but there's no way i can eat that all on my own. Luke, my boyfriend, doesn't eat sweets, so I have to share with someone!

Rhubarb crisp is literally the only thing I bake because it is just so easy and always turns out so good. Take a peek at the recipe I use (seriously so easy) that really kick-starts my summer. Ingredients

Rhubarb Layer

  • 4 cups of rhubarb cut into 1/2" pieces

  • 1 cup sugar

  • 1/3 cup flour

  • 1/2 tsp. cinnamon

Topping

  • 1/2 cup butter, melted

  • 1/2 cup old fashioned oats

  • 1 cup flour

  • 1 cup brown sugar

  • 1/2 tsp. salt

  • 1/2 tsp. cinnamon

Instructions

  1. Heat oven to 375 degrees.

  2. Mix rhubarb, sugar, 1/3 cup flour and 1/2 tsp. cinnamon in an 8" x 8" glass baking dish.

  3. Mix butter, oats, 1 cup flour, sugar, salt, and 1/2 tsp. cinnamon in a medium bowl.

  4. Sprinkle topping over rhubarb mixture.

  5. Bake for 30 minutes – 35 minutes, and enjoy!
